Without further ado, here's the recipe:
Easter shortbread cookies:
Ingredients:
5 oz. butter
1 ½ cup flour
1/3 cup powdered sugar
1/4 tsp. salt
2 tsps. vanilla
Preheat oven at 325
Combine all ingredients into a large mixer bowl with the paddle attachment and mix on low speed until fully combined and a soft dough texture.
Remove dough from the mixer and flatten onto a piece of plastic wrap. Fully wrap the dough and chill for about 15 minutes. This will help during the rolling out process so the dough is not so sticky.
Once dough is chilled, place dough on lightly floured surface and roll out to about ¼" thick and cut out to desired shape. Place on baking sheet and bake at 325 degrees for about 20 minutes.
Frosting ingredients:
1 cup butter, soft
3½ cups powdered sugar
1 tbsp. vanilla
**food coloring if desired
Sift powdered sugar, place in mixing bowl with soft butter and mix on medium speed until light and fluffy. Add in the vanilla and food coloring ( optional ) beat until combined and spreadable.
